I don’t have a sweet tooth, but I do love dark chocolate so when I gave up on most of my sugars I was still left with a craving and that’s where this Chocolate Chia Seed Pudding came to the rescue.

Also, another important disclaimer, I don’t really enjoy cooking but what I do feel is important is that I have control over my diet and make the right choices, so if at times it means that I need to make something that would help me, then I enjoy that feeling.

You can call it self-love, self-care or whatever other hashtag comes to mind but I do think being mindful of what you eat is important especially when you are catering to specific medical conditions.

As I mentioned in my post on My Diet for Endometriosis & Ehlers Danlos Syndrome – chia seeds have Omega-3 Fats which have anti-inflammatory properties, are high in protein, high in fibre, have important bone nutrients and more – basically, it has all the things I need.

So here goes… here’s…

My Endometriosis & Ehler-Danlos Syndrome Diet Friendly, Chia Seed Chocolate Pudding Recipe

Serves: 2 Portions

Ingredients:

Chia Seeds (black or white – your choice) – 5-6 tablespoons (Buy from US Amazon | India)
Cacao Powder – 1 tablespoons (Buy from US Amazon | India)
Unsweetened Almond Milk (or any plant based milk you prefer) – 1.5 cup (Buy from US Amazon | India)
Maple Syrup – 1 tablespoon (Buy from US Amazon | India)
Roasted & Crushed Almonds (or Hazelnuts or Walnuts) – not more than 10 (Buy from US Amazon | India)

Please note: the quantity of maple syrup mentioned is just to reduce the bitterness of the cacao powder. If you still find it too bitter (which many may), then I’d suggest to adjust the maple syrup as per your taste.

Step-by-Step Instructions:

1. Mix the dry ingredients – the chia seeds and cacao powder.

2. Add the almond milk and the maple syrup.

3. Mix well with a whisk because the cacao powder does tend to lump up.

4. Pour this into a jar and let it sit in the refrigerator for at least four to five hours. It’s during this time that the chia seeds absorb the almond milk turning it into a thicker consistency, just like a pudding.

5. Before diving into the pudding, make sure to garnish it with crushed roasted almonds giving it that much needed crunch (if you don’t want the crunch, then you can leave it out too).

Benefits:

I just wish to add here the reasons for using cacao powder, maple syrup and almond milk.

Cacao powder is an antioxidant, anti-inflammatory, lowers blood pressure and even improves cholesterol and blood sugar levels. It’s also believed to improve brain function, blood flow and supply to brain tissue.

Maple syrup too is an antioxidant, but it also has other nutrients like magnesium, zinc, calcium and more. It is lower in calories than refined sugar and if you’ve read my post on My Diet for Endometriosis & Ehlers Danlos Syndrome, then you will understand my reasons for staying away from refined sugars.

Unsweetened almond milk is a great alternative for someone like me who wishes to stay away from dairy as it may have added hormones, plus almond milk is lower in calories, has vitamin E and other healthy fats.

When do I have this pudding? I usually have this as a part of my evening snack or I’ll gobble up a couple of tablespoons if I feel hungry early in the day or even a little later at night if I’ve had an early dinner. So when do I have this pudding? Whenever I like because once made, you can usually keep it for upto five days in the refrigerator – but frankly, it doesn’t last that long! 😀

Please Note: I have tweaked this recipe so that it works as per my nutrition guidelines for my endometriosis and Ehlers-Danlos syndrome and to make it work for my taste too! Please consult a nutritionist, especially if you have a medical condition.

  1. I have saved this to try this week. I broke down and had chocolate ice cream due to cravings. I am lactose intolerant, so that’s not a great thing for me to do.

    1. Big Hug – letting go of those emotions can be so essential, but obviously not by having stuff which adds to our issues so yes please do try this – a bit of chocolate always makes us feel nice and dark chocolate works nicely too. You may need to adjust the chocolate and maple syrup quantities based on taste – I don’t mind it tasting a bit bitter, plus the added roasted crunchy almonds never let me miss the sweetness. Do give it a go and let me know how it is for you. 🙂

      Thank you for the suggestion and I would love to do that but as of now, I have very limited strength and managing a group would be tough for me on top of all my current responsibilities, but I hope that somewhere in the near future I can do something like that.
